Ingredients

  • 5 granulated sugar

  • 3/4 unsalted butter

  • 2 eggs

  • 1/2 vanilla extract

  • 1, NA all-purpose flour

  • confectioners' sugar

Directions: How to Make Lavender Madeleines

  1. Using a food processor, process sugar and lavender flowers until finely ground.

  2. Heat oven to 400 degrees.

  3. In a large bowl and using a wire whisk; mix eggs, lavender sugar mixture and vanilla until light and fluffy.

  4. Gradually whisk in melted butter.

  5. Using a rubber spatula gently fold in flour.

  6. Generously spray Madeleine pans with non-stick cooking spray.

  7. Spoon a scant tablespoon of batter into each madeleine mold, leave the batter mounded in the center.

  9. Immediately remove from pan and allow to cool on a wire rack.

  10. Store in an airtight container.

  11. Dust with confectioners sugar just before serving.
