  • 1 olive oil

  • 1 green chili pepper

  • 1 ground cumin

  • 2 ground coriander

  • 1 1/2 minced garlic cloves

  • 3 edamame

  • 1 cherry tomatoes

  • 1 of fresh mint

  • 1 basil leaves

  • 2/3, NA, NA scallion

  • fresh lemon juice

  • feta cheese

  • black olives

  1. Combine couscous, ½ tablespoon olive oil, minced chili, cumin, coriander, and garlic and edamame in a bowl.

  3. While couscous mixture is absorbing water, combine halved tomatoes, mint or basil leaves, scallions, and lemon juice in a separate bowl.

  5. Add feta cheese and gently mix to combine.

  6. Garnish with black olives, if desired., Add salt and pepper to taste and enjoy!
