  • 60 chicken pieces

  • 1 butter

  • 1/2 onion

  • 1/2 green capsicum

  • 250 red capsicum

  • 1 zucchini

  • 1 dry mustard

  • 1 French mustard

  • 3 tomatoes

  • 30, NA, 1 butter

  • 1 sugar

  • 1/4 tomato paste

  1. Saute onion & capsicums in butter until tender, add zucchini & cook 2 minutes.

  5. Place chicken in a baking dish with oil & bake at 180.C for 45 mins or until dark golden brown., While chicken is cooking, prepare sauce: Melt butter in a pan, add tomatoes, salt, pepper, sugar & tomato paste.

  6. Cover pan & bring to the boil, reduce heat & simmer 15 minutes.

  7. Strain or beld tomatoes & return to pan, add cream & reheat gently.

  8. Serve chicke with sauce poured over.
